Cymbopogon flexuosus, also known as lemongrass, is an aromatic tropical grass cultivated primarily for culinary and medicinal use.

The leaves, especially the base, have a strong lemony flavor, tinted with a hint of ginger that defines much of Thai, Burmese and Sri Lankan cuisine.

There are two species species of “real” lemongrass that are used in the production of oils. The oil is steam-distilled from the fresh or partly dried stems and can be used in citrus soaps, perfumes and cleaning agents.

C. citratus contains enough myrcene to make the oil susceptible to oxidative polymerization, meaning that it does not have a very long shelf life.

C. flexuosus contains less myrcene and therefore has a longer shelf life, so it is dominantly used in the perfume industry.

TIPS: Lemongrass, being tropical by nature, does not tolerate frost so make sure to bring them in during the winter!

The Tale:

The general distinction is this:

C. flexuosus (East-Indian lemongrass) is native to India, Sri Lanka, Burma and Thailand. It is also called cochin or Malabar grass.

Lemongrass is an important culinary herb in tropical Asia while in India it is cultivated mainly as a medical herb and for perfumes.

C. citratus is of Malaysian origin and is more typically used for cooking. When crushed, the fragrance resembles the scent of lemon.
