Helianthus strumosus (helianthi) is a beautiful edible perennial, known for the tasty undergound tubers that produce 3 meter tall yellow flowers at the end of summer.

The flowers are large and yellow, resembling daisies, except that they are hoisted 3 meters off the ground.
The leaves are broad, lance-shaped, and quite rough to the touch.
Growing from a rhizomatous root system, H. strumosus grows up to three meters every summer.
It can be difficult to distinguish since it is known to be the most variable of the sunflowers – but using the petioles, leaves, and stem can usually help you identify this lady correctly.

👩‍🍳COOKING TIPS👩‍🍳:
This is one of the tastiest ancient (some say forgotten) root vegetables in the Sunflower family – alongside the Jerusalem artichoke (Helianthus tuberosus) – sharing a somewhat sweet and nutty flavor. Here are some of my favorites – the blue cheese one is really extraordinary.

    • ⚠️ It is best to consume them in small quantities, as they can sometimes be difficult to digest. That being said, you can enjoy them throughout the winter, as they are among the last vegetables harvested from the garden.

👨‍🌾GARDENING TIPS👨‍🌾:

    • 🌱 Plant in March/April for a November-March harvest
    • 🪣 The tubers should be dug up with a fork after the first frosts, when the foliage has turned black.
    • The tubers do not keep very well so make sure to use them up within 2/3 days of diggin them up!
    • Can spread very quickly if the tubers are not dug up and used

The Tales:

In Greek, the word helios means “the sun”. So we cannot be confused about what the flowers are meant to represent.
